SIBO friendly banana bread

This recipe was created for a sweet treat after treating small intestinal bacterial overgrowth (SIBO). This banana bread is lower in carbohydrate compared to traditional recipes, to reduce the risk of SIBO relapse, as there is a high susceptibility early after treatment.

Ingredients
Serves 8
Wet ingredients
4 very ripe bananas (I use frozen bananas) 3 eggs 1 tsp vanilla extract 8 drops of liquid stevia (found at most health food stores) 7 tbsp coconut oil 1/2 cup canned coconut milk
Dry ingredients
3/4 cup coconut flour 1/2 cup almond meal 2 tbsp ground cinnamon Pinch of salt 2 tsp baking powder 1/2 tsp bicarbonate of soda
Topping
Organic shredded coconut 1 banana cut in half
Method
Preheat oven to 180°C (356°F). Line a loaf tin with baking paper.
If you are using bananas that have been in the freezer read ahead, otherwise skip to the next paragraph.
Put the bananas in a bowl in the microwave for 90 seconds or until the skins can just be peeled off (do not overheat and cook). Put the skinless bananas back in the microwave for 1 minute or until they can be mashed.
Mash the bananas into a creamy consistency. In a large seperate bowl whisk the eggs until they are smooth and you can see air bubbles forming. Add the stevia, vanilla, coconut oil, coconut milk and mashed bananas and stir quickly to incorporate as much air as possible. Add all of the dry ingredients and mix.
Pour the mixture into the loaf tin. Top with shredded coconut and the banana. Put in oven for 1 hour until golden brown and the bread does not collapse to the touch. Let cool in the tin so the cake sets before removing and cutting. Spread with butter or nut butter of choice and enjoy.
Note: If you are treating SIBO, make sure you do not have more than one serve of the bread per three hours as this has the amounts acceptable to Phase 1: Reduce and Repair (Semi-restricted) and Phase 2: Remove and Restore of the Bi-Phasic diet by Dr. Nirala Jacobi.
