Choc orange chia seed puddings

Oranges are in season at the moment so there is an abundance which means they are cheap and fresh. These puddings are super easy to make and are perfect for a breakfast option, as can be made the night before and transported mess free. They are light and fluffy and taste very indulgent (while still being extremely healthy), so perfect for the lovers of "dessert for breakfast" people. To up the protein content you can add protein powder to the chia mixture and top the puddings with yoghurt.


Justification for ingredients:
Oranges- As they are so delicious at the moment. They are amazing source of vitamin C and while we are still in winter we need to be continuously looking after our immune system.
Chia seeds- These are full of omega-3 fatty acids and extremely in fibre. Although high in omega-3, they are not as effective as the form found in fish so you will still need to get in your 2 servings of fatty fish a week.
Avocado- full of monounsaturated fatty acids, vitamin C, K, folate and fibre.
Ingredients
Makes 4
5 oranges (grate the rind of 1 orange )
1/2 avocado
1/2 cup chia seeds
1 1/2 cups milk of choice (I used unsweetened almond milk)
1/2 tsp vanilla extract
1 tbsp maple syrup (or sweetener of choice)
2 tbsp cocoa powder
1 tsp cinnamon
Pinch sea salt
1/4 cup almonds
Method
Put the milk, avocado, cinnamon, cocoa powder, maple syrup, rind of one orange and sea salt in a blender and blend until smooth. Transfer to a jug and add the chia seeds and vanilla and whisk. Evenly pour this mixture into 4 jars.
Cut up 3 oranges (remove the rind) and put them in the blender with the almonds- do not worry about cleaning the blender of the previous mixture. Blend until smooth and pour on top of the chia mixture in the jars. Put in the fridge to set (at least 6 hours or overnight).
When ready to serve, cut up the remaining 2 oranges and pop on top of the puddings.
